The Meatless Meat Challenge 2022
The Meatless Meat Challenge (MMC) 2022 was officially launched on 4 March 2022 by Singapore Food Manufacturers' Association (SFMA), Food Innovation & Resource Centre (FIRC) and Enterprise Singapore (EnterprieSG). The challenge spans across 6 months in 3 phases, with the aim to accelerate alternative meat protein options developed in Singapore and to help local food enterprises to stay ahead of the competitive industry. The MMC brings together 10 companies and 40 Singapore Polytechnic (SP) students from the School of Chemical & Life Sciences and the Media, Arts & Design School, along with students from other related disciplines to ideate, prototype and develop the next innovative meatless meat products.
The first phase of work involved an intense 10-days boot camp known as the Transdisciplinary Innovation Project (TIP), where students worked closely with food companies to understand their mission, gather expert insights, ideate, map, prototype, test and finalise the product concepts. Under the mentorship of FIRC and the school's lecturers, the students embarked on the next five months working with food companies to reiterate and translate the concepts derived from TIP into actual food products with relevant marketing and communication strategies. A series of training workshops on technical knowledge and hands-on activities on plant-based product development, covering topics ranging from experience, were conducted by FIRC to better equip the participating teams ingredients, processing, nutrition and regulations to shelf life and brand. The winner was announced in the Grand Finals held at Singapore Polytechnic on 31 August 2022 where competing teams pitch and showcase their products to a panel of esteemed judges and industry partners.
